Why Peach Pie Dumplings?

Beckon Ice Cream Co-Founder, Gwen is a huge dumpling lover. Give her any kind of dumpling and she’ll be happy. In honor of National Dumpling Day this year, we partnered with our friends at Mei Mei, a fellow woman-owned company in Boston. Mei Mei makes some of the best dumplings in town, and yes, they even make dessert dumplings that pair well with our surprisingly lactose free ice cream πŸ˜‹. One of our favorite recipes of theirs is a simple one with only six ingredients. Let the flavors of fresh peaches shine, and compliment with delicious ice cream. What more can you ask for?

Peach Pie Dumplings Ingredients:

  • 5 lbs fresh peaches
  • 3/4 cup sugar
  • 3/4 cup cornstarch
  • 1 cup sater
  • 2 Tbsp lemon juice

Step 1: Peel and pit the peaches

  1. Boil a large pot of water.
  2. Blanch the peaches in the boiling water for approximately 45 seconds to 1 minute.
  3. Place them in an ice bath or rinse under cold running water until they have cooled.
  4. Peel the skins off and de-pit the peaches. You can break the peaches into smaller pieces with your hands or a knife (pro tip: it’s more fun with your hands!)

Step 2: Cook the filling

  1. In a bowl, mix the cornstarch and water together thoroughly and set aside.
  2. In a large pot, add the peaches and sugar (another pro tip: reuse the same pot for boiling water to save on dishes).
  3. Cook on medium high heat, stirring frequently until the peaches come to a simmering boil, this should take about 15 minutes.
  4. Add the cornstarch and water mixture into the peaches and stir constantly until the mixture thickens and the filling looks translucent (not cloudy), this should take about 5 minutes.
  5. Add the lemon juice and mix thoroughly. Taste the filling!
  6. Add more sugar or lemon juice to your personal taste if needed.

Step 3: Cool the filling

For optimal dumpling folding, the filling needs to be cooled and similar to a jello consistency. To cool quickly, spread the filling on a baking sheet or shallow pan and leave in the fridge for 2-3 hours or the freezer for about 45 minutes to an hour until cooled and thickened.

Step 4: Fold your dumplings

We love the simple half moon for these peach dumplings! You can add a little flair by using a fork to make a ruffled or pressed edge.

Step 5: Cook your dumplings

You have options here:

  • Fry – for 2 minutes until golden brown. These can be put in the fridge and reheated in the toaster or oven at 350Β°F.
