Happy National Ice Cream for Breakfast Day!  This February holiday is proof that ice cream is perfect at any time of the year, and at any time of the day. Whip out those scoops (before noon), we certainly won’t judge!

Did you know that eating ice cream for breakfast is actually good for you? According to a Japanese scientist, eating ice-cold food immediately after waking up shocks our brains into an active state, which increases our alertness. See mom, it’s healthy! A no brainer to us.

Lactose-free Affogato

Beckon’s Affogato

Ingredients:

– Beckon Ice Cream

– Espresso or strong brewed coffee

– Your favorite toppings (sprinkles, chocolate, nuts)

 

Instructions:

– Place 2 small scoops of Beckon ice cream (espresso, chocolate or vanilla) in a coffee cup

– Pour one shot of espresso or 3 tablespoons strong brewed coffee over the top of the ice cream

– Top with your favorite toppings! We love shaved chocolate or chopped nuts

 

Waffle Ice Cream Sandwich: 

Ingredients:

– Beckon Ice Crean

– Frozen Waffles

 

Instructions:

– Grab two of your favorite frozen waffles, and put them into the toaster

– Once they’ve popped out, place 2 scoops of your favorite Beckon flavor on one waffle, and top with the second. Either eat warm, or pop into the freezer for a fully frozen treat!
