Treat Mom to Brunch this Mother’s Day! Introducing: Beckon’s Overnight Baked Brioche French Toast
With all the sweetness and none of the gunk-filled ingredients, this recipe is the most delicious way to add some “mmmmm” to your and your mom’s special morning. And no, you do not need to know how to bake in order to pull this out of the oven and make people think you know what you’re doing 😉
Ingredients (Serves 6)
- 1 pint Beckon Vanilla Ice Cream, melted
- 1 egg yolk
- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- 1 loaf brioche, sliced
- ¼ cup sliced strawberries
- ¼ cup blueberries
- Maple syrup for serving
- 1 pint of your favorite Beckon Ice Cream for serving
Directions
- Whisk together 1 pint melted Beckon Vanilla Ice Cream, egg yolk, cinnamon, an d vanilla extract
- In a pie pan (we love the Great Jones one!) layer the slices of brioche in two concentric circles, gently pour Beckon mixture over the top making sure each slice is covered
- Top with strawberries and blueberries, cover with tin foil and let sit overnight in the refrigerator
- Preheat the oven to 350 F, bake for 20 minutes covered, remove cover and bake an additional 20 minutes
- Serve warm with maple syrup, a scoop of your favorite Beckon Ice Cream and fresh berries
- Enjoy your Baked Brioche French Toast!
