Ingredients

  • 4 pints Beckon Cookies & Sweet Cream Ice Cream
  • 1 box crème filled cookies
  • 1 8oz package cream cheese
  • ½ cup sour cream
  • 1 cup buttermilk
  • 3 large eggs
  • 1 ½ cup coffee, cooled
  • ¾ cup vegetable oil
  • 2 tsp vanilla extract
  • 3 cups flour
  • 2 2/3 cup sugar
  • ½ cup cocoa powder
  • 1 ½ tsp baking powder
  • 1 tbsp baking soda
  • ¾ tsp salt

 

Directions

Cake

  1. Preheat oven to 350F. Spray a large baking sheet with non-stick cooking spray, line with parchment paper, spray with cooking spray. Set aside.
  2. Sift together the flour, sugar, cocoa powder, baking powder, baking soda,  and salt together in a large bowl
  3. In a medium bowl, whisk together sour cream, buttermilk, eggs, vegetable oil, and vanilla until smooth. Slowly whisk in coffee.
  4. Add your wet to your dry ingredients and whisk to incorporate until smooth.
  5. Pour on to prepared baking sheet. Bake in the oven 18-20 minutes until the cake is set and a toothpick inserted into the center comes out clean.
  6. Let cool.

 

 Cookie Balls

  1. Using a food processer or stand mixer, crush crème filled cookies until smooth.
  2. Add cream cheese and blend until smooth.
  3. Roll into tbsp sized balls using the palms of your hands and place onto a small cookie sheet.
  4. Place in the refrigerator or freezer. Chill at least 2 hours.

 

Assembly

  1. Line two 9 inch round cake pans with parchment paper.
  2. Using the bottom of one of the pans, trace the circle onto a sheet of parchment paper. Cut the parchment paper into the traced shape. Place the round on your sheet pan and cut out a cake round. Repeat.
  3. Place a cake round into each cake pan. Top with Beckon Cookies & Sweet Cream Ice Cream until it reaches the top of the cake pan. Smooth using an offset spatula. Place into freezer and freeze until set a minimum of 4 hours or overnight.
  4. Remove your cake and Beckon Ice Cream rounds from the cake pans. Place on to a cake stand or plate layering so that the smoothest layer is on top.
  5. Top the cake with your cookie balls in a circle around the edge of the top of the Beckon Ice Cream Cake.
  6. Slice, serve, and enjoy!!
