Lactose-Free Chocolate Covered Ice Cream Pops

Yes, it’s that easy! This simple recipe is even a fun way to entertain the kids in your life (yes, your inner child counts) this summer! What’s even better? As long as you use dark chocolate, this recipe is completely lactose-free! That means you can enjoy these chocolate covered ice cream pops in the pool without a mess. Now all you need to do is grab your retro swimsuit, your aviator sunglasses, but on a summer jams playlist, and lather yourself in sunscreen.

Beckon Flavor Used: Cookies & Sweet Cream

You’ll Need:

  • 1 pint Beckon Cookies & Sweet Cream
  • Dark Chocolate
  • Coconut Oil
  • Popsicle Sticks

Instructions:

  1. Cut pint into slices, laying the pint on its side
  2. Put ice cream slices onto a popsicle stick
  3. Melt dark chocolate in microwave and add 1 tbsp of coconut oil, mixing well (this will help the chocolate harden)
  4. Cover the pops in chocolate
  5. Freeze for 20-30 mins
  6. Enjoy!
