Spooky season is almost here and this is a recipe the whole family will love. You can really personalize it to your own tastes. If you like a little extra sweetness, you can make them with Pumpkin Spice Cheerios like I did or you can use any flavor you like. If you prefer them less sweet, you can reduce the amount of maple syrup slightly and increase the peanut butter to make up for it. Instead of using traditional vanilla extract I like to add melted Beckon vanilla ice cream

 adds another level of subtle sweetness.

To make these extra spooky mummy bites you can add candy eyes and Beckon vanilla cream drizzle. Or if the kids want to make them more personalized they can add any verity of Halloween decorations such as: candy corn vampire teeth and add red food coloring to the vanilla cream drizzle.

Tip: Packing a spoon full into mini muffin tins is a great way to make them into bite size portions. They also hold their form a lot easier this way. You can store them in the fridge or in the freezer either way they will harden up fine. Just keep in mind that if they will soften up after being taken out of the fridge, so eat them quickly.

Ingredients

Spooky O’s

  • 1/2 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1/4 c melted Beckon vanilla ice cream
  • 4 cups Cheerios, any flavor is fine but I used pumpkin spiced

Vanilla Cream Drizzle

Instructions

  1. Add the maple syrup and peanut butter to a large, microwave safe bowl. Microwave on high for 1 minute. Remove and stir until well combined. Return the bowl to the microwave for another 30 to 45 seconds.
  2. Add the melted Beckon ice cream to the peanut butter mixture and stir well.
  3. Then add the Cheerios to the mixture and stir until the cereal is well coated.
  4. Drop spoon-fulls into a mini muffin tin or onto a parchment paper lined baking sheet.
  5. Add your choice of spooky decorations and place them in your fridge or freezer to allow them to set. They should harden up enough to pick them up within half an hour, but it takes a few hours for them to be more firm.
  6. Serve them in an empty Beckon ice cream pint and enjoy!
