Introducing: Beckon’s Sprinkle Cookie Ice Cream Sammies!

Ingredients

  • 1 pint Beckon Vanilla Ice Cream, melted
  • 1 ½ cups flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup sprinkles, plus more for topping

Directions

  1. Preheat oven to 350F. Line baking sheets with parchment paper. Set aside.
  2. Whisk together the flour, baking powder, and salt together in a medium bowl
  3. In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on medium-high speed until creamed, about 1 minute. Add the egg and vanilla extract and beat on high until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat to combine
  4. Add the dry ingredients and mix on low. Beat in ½ cup sprinkles.
  5. Scoop 1 Tbsp of dough and roll into balls, repeat. Roll balls in extra sprinkles.
  6. Place each about 2 inches apart on the baking sheets. Bake for 8-12 minutes until lightly brown on the sides.
  7. Remove from tray and let cool. Scoop Beckon on to one cookie and sandwich with another. Repeat and place in the freezer until ready to eat.
  8. Enjoy your ice cream sammies, poolside because why not!
