Introducing: Beckon’s Sprinkle Cookie Ice Cream Sammies!
Ingredients
- 1 pint Beckon Vanilla Ice Cream, melted
- 1 ½ cups flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- ½ cup sprinkles, plus more for topping
Directions
- Preheat oven to 350F. Line baking sheets with parchment paper. Set aside.
- Whisk together the flour, baking powder, and salt together in a medium bowl
- In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on medium-high speed until creamed, about 1 minute. Add the egg and vanilla extract and beat on high until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat to combine
- Add the dry ingredients and mix on low. Beat in ½ cup sprinkles.
- Scoop 1 Tbsp of dough and roll into balls, repeat. Roll balls in extra sprinkles.
- Place each about 2 inches apart on the baking sheets. Bake for 8-12 minutes until lightly brown on the sides.
- Remove from tray and let cool. Scoop Beckon on to one cookie and sandwich with another. Repeat and place in the freezer until ready to eat.
