Lactose intolerant readers, rejoice!  You can still enjoy dairy if you’re lactose intolerant.  Yes, you heard that right.  The biggest misconception with lactose intolerance is that you have to avoid dairy products entirely.  There are actually plenty of lactose-free dairy options out there.  

Lactose-free does not mean dairy-free.

The truth is that you can still enjoy dairy foods without experiencing all of the negative symptoms. Lactose intolerance is a deficiency of lactase enzyme, which is necessary to the digestive process.  Lactose-free dairy products simply add this enzyme back into the digestive process.  Lactase enzyme is tasteless, colorless and completely natural.  At Beckon, we include the lactase enzyme in our ice cream to make it lactose-free.  This also keeps it dairy-full for that creamy consistency you find in traditional ice cream.
